There’s a reason our granola always comes out crispy, golden, and perfectly clustered. It’s not just the ingredients it’s the method. At our kitchen, we bake every batch with the same care a private chef gives a fine dessert. Today, we’re sharing the secret behind that satisfying crunch.

The “Low and Slow” Method

The magic starts with temperature and patience.
Most people crank up the heat, thinking faster baking equals crunchier granola. But that’s the biggest mistake!

We bake our granola low and slow, around 140–160°C , for nearly 40 minutes, sometimes more. This allows the oats, nuts, and sweeteners to caramelize gently without burning. The result? Deep, even flavor and a golden crispness that stays crunchy for weeks.

Why Oils are a MUST

Coconut & Olive oils is our go-to fat for a reason.
Unlike butter or vegetable oil, coconut oil gives granola a light, toasty flavor while helping it crisp without greasiness. It also binds ingredients together beautifully, essential for forming those irresistible clusters.

The Sweet Science: Brown Sugar and Natural Syrups

We use a touch of brown sugar not just for sweetness but for texture.
The molasses in brown sugar creates a thin caramel coating that hardens slightly as it cools, locking in that crunch. 

Combine that with a natural syrup like honey or maple, and you get perfectly chewy and crispy clusters that don’t fall apart.

The Secret Ingredient: Flour

This one surprises people, but yes, a bit of flour makes a big difference. (we use GF flour for GF mixes)
It acts as a binder, helping the oil and sugar cling to the oats and nuts. When baked, it creates a delicate crust around each cluster. You’ll never have loose, dusty granola again.

Chef’s Tip: Don’t Stir Too Much

Once you spread your granola on the tray, resist the urge to stir.
Leave it alone for the first 30 minutes. This lets the sugars and oils set in place. When it’s golden and fragrant, then you can break it gently into clusters after cooling.
